Not that anyone has really noticed, but I have not posted anything for a couple of weeks. I took some time off to focus on other things. But, I still did a lot of cooking during my break, so I have plenty of catch up posts to make.
During this strange time of social distancing, I’ve been trying my hardest to develop recipes by using as many ingredients that I already have on hand as I can. Sometimes I surprise myself by what I come up with. I had a craving for chocolate chip pancakes, but I could only find white chocolate chips in my cupboard. The white chocolate chips reminded me of red velvet cookies, which in turn reminded me of red velvet pancakes. So, I decided to make red velvet white chocolate chip pancakes. Surprisingly, I still had Oreos left over, so I crushed them and tossed them into the pancake batter. The result was the best red velvet pancakes that I have ever had.
Recipe:
- 1 cup flour
- 1 1/2 TBSP cocoa powder
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1 tsp baking powder
- 1/4 cup sugar
- 1 tsp vanilla
- 1 egg
- 1 cup milk
- 2 1/2 TBSP melted butter
- 1 TBSP white vinegar
- red food coloring
- 1/4 cup white chocolate chips
- 1/4 cup crushed Oreos + more for sprinkling on top
Cream Cheese Icing:
- 1 cup powdered sugar
- 3 TBSP butter
- 1/2 tsp vanilla
- 1/4 cup milk
- 3 oz cream cheese
Instructions:
1. Sift together the flour, baking powder, baking soda, salt, and cocoa powder into a mixing bowl.
2. Add the sugar to the dry ingredient mixture.
3. In a separate bowl, whisk together the milk, egg, vinegar, melted butter and vanilla.
4. Slowly combine the two mixtures together. Add the red food coloring until the batter reaches your desired shade of red. Fold the chocolate chips and crushed Oreos into the pancake batter.
5. On the stove, heat up a well-greased gridle.
6. Pour about 1/4 cup of the pancake batter onto the griddle. Cook until the pancake batter becomes bubbly on top. Flip the pancake over and cook for 1- 2 minutes. Serve with cream cheese icing, crushed Oreos, and whipped cream.
Cream Cheese Icing:
- Cream together the cream cheese and butter. Add the powdered sugar and vanilla. Slowly add the milk until the glaze reaches your desired consistency.
