Simple Flatbread (No yeast)

Whenever I go on a low-carb diet, I always have a hard time because I am constantly tempted by bread. And Dr Pepper. And pizza. And pasta. And potatoes. And cookies. Okay, I never last long because I love carbs. I just love food in general. I don’t call myself Ms. Eatzzalot for no reason.

Going back to bread, I think that it is important to have a good flatbread recipe in your arsenal. Flatbread is so versatile. With it, you can make sandwiches, pizzas, and chips. You can use it to soak up the leftover gravy on your plate. You can even make this delicious Chicken Bacon Pesto flatbread.

Chicken Bacon Pesto Flatbread

This recipe is quick and simple. It uses basic ingredients that you probably have in your pantry.

Recipe:

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 3/4 cup water
  • 2 TBSP olive oil
  • extra olive or vegetable oil for frying

Instructions:

  1. In a mixing bowl, sift together the flour, baking powder, and salt.
  2. Create a well in the middle of the flour mixture. Add the olive oil and water to the well. With a spatula, gently fold the mixture together until combined.
  3. On a lightly-floured surface, knead the dough until it is smooth and it springs back when you press it with your finger.
  4. Let the dough rest for about 10 minutes.
  5. Divide the dough into six equal sections. Roll out each dough section to 1/4 inch thickness.
  6. Heat oil in a frying pan. Place dough into the frying pan and cook each side for about 1-2 minutes, or until golden brown.
